Our European cousins eat the white ones but we here in the UK are quite fond of the green ones. With a snappy, fresh flavour (and apparently, zero on the calorie front), you can steam them, boil them, flame grill them on the BBQ. Serve them with butter, oil or plain; in a salad, next to your meats, in a risotto or quiche. The choices are endless! Wash them all down with a delicious Sauvignon Blanc or something similar.
