The Romans used to have oysters shipped in barrels from the Thames estuary back to the eternal city, they loved them that much. They also pretty much sustained the poor in Dickensian Britain…and now, in the 21 st Century, they are seen as a delicacy. Most prefer them raw with a splash of lemon or vinaigrette made with shallots and red wine vinegar. If you don't like them raw, try them grilled.  Either way, they're awesome with Fino Sherry or Champagne!
